Description
Climate:
After a rainy winter, replenishing mostly the water reserves of the soil, spring was moderately watered and the summer incredibly hot and dry. The vines, although they have suffered from heat and water stress, produced a very good quality grape harvest in normal quantities.
Soil:
Clay-sandstone stony red links wine, particularly well draining that promotes the production of quality wines.
The vines:
100 % Rolle (Vermentino)
Harvest:
Grapes, harvested mechanically very early in the morning goes into a crusher destremmer, and then cooled (10 ° to 12 °). They macerated then from 3 to 12 hours in the winepress without air, before direct pneumatic. A cold pellicular maceration for about 4days is done to settle and clarified juices. Fermentations are carried out under the control of temperature (max 18 °).
Tasting:
Beautiful bright color with green hues. Elegant and expressive nose with aromas of pear, banana, pineapple. Well balanced mouth wide enough without persistent aggression ending with fresh notes of citrus, grapefruit and lime.
Very pleasant wine to drink as an aperitif, your fish or grilled white meat or steamed on a octopus salad or grilled scampi.
