100% Rolle (Vermentino)
Grapes, harvested mechanically very early in the morning, goes into a crusher-destermmer, then cooled (10 ° to 12 °) before pneumatic pressing. A cold pellicular maceration for about 4 days is done to a settle and clarifies juices. Fermentations are carried out under the control of temperature (max 18 °). Beautiful sparkling color, still young with green hues. Elegant nose of tropical fruit, pineapple, and litchi mixed with vanilla to finish on a mineral touch of flint.
