After a well-watered winter, generously restoring the soil and subsoil water reserves, spring was mild no frost or heavy storm.
These climatic conditions allowed a good flowering and a good fruiting.
The summer was particularly dry and hot. On July 27, a big rainstorm abundantly watered our vineyard, which, thanks to this water, could eat normally to finish its maturation cycle.
The harvest was magnificent.
A complex soil with clay and sandstone coloured deep red by the iron oxide, refreshed by the salt air of the Mediterranean Sea. The soil is very well drained which improves the grapes quality.
Grapes varieties :
Rolle 50% , Ugni Blanc 25% and Clairette 25%.
The grape harvest for the Rolle began September 8. These are very early morning to return quickly of cold grapes in our cellars, which facilitates the smooth running of the fermentations. We are equipped of a tubular exchanger to cool the harvest to preserve the aromas during the pressing phase.
The juice was pressed in the new Inertis press away from the air. Juices are then a holding cold for several days to clarify. Fermentation starts then, and lasts more than 15 days at low temperatures.
Pale yellow to a beautiful shine. Complex nose combines fruity notes of peach, citrus, lime and floral notes of honeysuckle. The palate is fresh, light, all in a beautiful lace finesse. To drink with crustaceans, shellfish, seafood, grilled fish or aperitif simply.
