Cuvée du Loup
After a rainy winter, to fill water reserves in the soil, the spring was dry and summer was very dry. The harvest was very good quality although some grapes have suffered from the drought. The quantity of the harvest is 10% less than the previous vintage.
A complex soil with clay and sandstone coloured deep red by the iron oxide, refreshed by the salt air of the Mediterranean sea. The soil is very well drained which improves the grapes quality.
Clairette 50% and Rolle 50%.
We wait that the grapes reach their maturity, and then we make the harvest by hand. It is make early in the morning to keep a small temperature. We also have a cooling machine to refresh the grapes arriving in the cellar when outside temperature is too hot to keep the flavour inside the fruits , and so the quality is conserved.
Skin contact – press – clarification and fermentation in oak barrels during 4 months. Half of this barrels are new and half are one year old.
Round in the mouth and fleshy, this wine is good with seafood, white meat, foie gras and cheeses. It will be a good accompaniment of your gastronomic meals.
